1. Has to be female. (Males won't have good white when it gets older).
  2. Has to have good soft shiny, silky like shiroji form head to tail. The shinier shiroji is better than milky white shiroji, flat white, dull white.
  3. Yellow head is acceptable but the fish has to be female and good soft shiny shiroji, silky shiroji.

  4. Good body proportion with a thick tail joint ( proportion from the shoulder to the tail joint) and have good body length.
  5. Make sure the fish has black or sinking black on the head, mouth (look inside the mouth upper palate and lower for sinking sumi) or any side of the cheek.
  6. Black skull better than white skull.

  7. Fully developed tosai sumi on the head will change. As it grows.

  8. Don't worry if the fish doesn't have motoguro. If the fish has black or sinking black on any side of the cheek or on the head or mouth most likely motoguro will come out. If they don't come out they are not a major concern.

  9. Buy fish from a well known shiro utsuri breeder; because shiro utsuri that comes from showa breeding tends to have a sumi that is unstable and the sinking sumi may never develop or tobi hi may develop in the future.
  10. Look at the fish stomach for any beni or tobi hi.
  11. Check for head deformity, head too small, too short of the head, too flat of the cheeks, mouth too pointed, too small of the mouth, all the fins. Remember high percentage of shiro utsuri have pointed mouth.
